These are my attempt at making the amazing Chocolate Coconut Balls that are served in the Deli of the Spa at my favourite hotel in the Carribean. Along with their oaty cookies they are my must nibble treat on the beach after a hard morning exercising.
And no beetroot in sight!
They are not sweet, so if you have a sweet tooth you might want to add some icing sugar to the mix, but are a just perfect energy ball for fuelling after a workout.
Melt 2 teaspoons of coconut oil (in do this gently in a microwave, in the food processor bowl, so I don’t have to transfer melted oil between bowls) and then process in a food processor with 125g desiccated coconut.
Then add 2 tablespoons cocoa powder, 2 tablespoons maple syrup and 2 tablespoons coconut mils, ½ teaspoon vanilla extract and ½ teaspoon mixed spice and process some more until the mixture comes together.
Form the mixture into 12 balls and allow to harden in the refrigerator.
They will last for a few days nibbling.
You can make the balls without chocolate, and without spice, but I think those flavours add to the moreishness.
And for those observant folks ... there were 12, but I ate one before I took the pic!
