Ellens Power Bars

My niece Ellen is a keen cyclist and also loves to cook. She shared with me her recipe for her Power Bars.
OMG these are delicious!
Her version uses almonds, but since the recipe uses peanut butter I replaced with salted peanuts, for that marathon bar salty sweetness.
You have to try these. Just mix all the ingredients in a bowl then bake at 180C for about 20 minutes until lightly golden. Cool slightly then cut into slices or squares.

Ingredients
120ml sunflower oil
200g soft brown sugar
2tbs golden syrup
1tbs peanut butter
1/2tsp vanilla extract
25g sesame seeds
25g pumpkin seeds or sun flower seeds
50g salted peanuts (small peanuts or almonds chopped up)
50g currents (you could use cranberries or any other dried fruit you love)
225g oats
