Cranberry and Orange Marathoner Muffins

I love loud leggings, so the majority of my running kit is Tikiboo.

As a little thank you treat I thought I'd bake some cakes to take over. It's Christmas and invention time in the Cheesecake Runner kitchen, so I've baked Cranberry & Orange Marathoner Muffins.

Packed full of oaty and fruity goodness these are sinch to make too!

Here goes ...

Preheat the oven to 180C/Fan 160C. Grease 12 holes of a muffin tin well with a little vegetable oil.

Measure out into a mixing bowl 300g oats, 3-4 tsp cinnamon, 1 tsp baking powder and 150g cranberries, and give everything a good stir.

Grate the rind from a large orange and add to the dry ingredients.

Melt 100g butter in another bowl and mix in 3 beaten eggs, 100g peeled and grated carrot, 100g sugar and the juice of half the orange.

Mix the wet ingredients into the dry and stir until just combined.

Spoon the muffin mix into the holes in the muffin tin (making sure a few cranberries are adorning the tops) and bake for 25 - 35 minutes until the muffins are golden and are firm to touch.

Leave the muffins to cool in the tins (they're a bit fragile), dust liberally with icing sugar 'snow' and tuck in!
