Banana Energy Muffins

I recently did a Facebook Live with Luke Tyburski on Real Food to Fuel Running, and was inspired to play around with my oaty muffin recipe to make a banana variant.

These are super easy, tasty and a great real food to fuel long runs.

Banana Energy Muffins

Preheat the oven to 180C/Fan 160C. Grease 12 holes of a muffin tin well with a little oil.

Measure out into a mixing bowl 200g oats, 1tsp cinnamon, 1tsp baking soda, 100g sugar and give everything a good stir.

Mash about 4 bananas (mine weighed about 130g each). Add this to the dry mixture along with about 75g sultanas. Stir everything to incorporate the banana and fruit evenly. You could also add nuts and seeds to the mixture, whatever you fancy really!

Melt 100g butter in another bowl, then beat in 3 eggs.

Add the wet ingredients to the dry and stir well to combine.

Fill your muffin tin with mixture and then bake for 25 - 30 minutes until golden brown.

Cool on a wire rack then eat!
