Xmas Mincemeat Marathoner Muffins

The festive season is well upon us and I'm preparing for a bit of baking later in the week. So last night made some Xmas Mincemeat Marathoner Muffins.

Variation on a theme, but they work!

Preheat the oven to 180C/Fan 160C. Grease 12 holes of a muffin tin well with a little oil.

Measure out into a mixing bowl 200g oats, 2tsp mixed spice, 1tsp baking soda, 125g sugar and give everything a good stir.

Grate (using a food processor) about 4 small apples (to give about 400-450g of grated apple). Add this to the dry mixture. Stir everything to incorporate the apples evenly.

Melt 100g butter in another bowl, then beat in 3 eggs.

Add the wet ingredients to the dry and stir well to combine.

Half fill each muffin hole with the mixture and then add 1 tsp of mincemeat to each and top with the remaining muffin mixture to seal in the mincemeat. Bake the muffins for 25 - 30 minutes until golden brown.

Cool on a wire rack then eat!

Dust with a little icing sugar for a festive healthier treat!
