Quick Chicken, Courgette and Lemon Linguini

When you're training for a marathon you 1. don't have a lot of time 2. have a massive appetite, 3. need great nutrition 4. can't live without CARBS!

This dish ticks all boxes.

First cut up a chicken breast into strips and fry in a hot pan with a drizzle of olive oil. Once the chicken is sizzling put the linguine on to cook (according to packet instructions) in a large pan of boiling water.

Whilst the chicken is cooking cut one courgette into very thin long strips. I had a few "stray" spring onions so cut them in thin strips too. You could use onion or garlic for a bit of flavour too.

Once the chicken is seared brown and cooked through remove to a plate and throw in the courgette and spring onion strips and fry in the residual oil until soft.

By this time the pasta should be cooked, so drain and add to the veg along with the chicken, juice and grated rind from half a lemon and a ladle of the pasta water to loosen.

Toss together, heat everything through then turn out into a wide rimmed dish. Grind over black pepper and a sprinkling of chopped parsley.

Quick and delicious, perfect training food.
