Blackberry and Apple Oat Muffins

Yesterday I went out into the woods nearby for a short walk foraging for blackberries.

I was ambling along past the lake I often run by and the blackberries were lush and dripping off the spiky bushes. I picked a big bowl.

Returning home I saw my baby apple trees straining under the weight of a new seasons crop of apples. Only one thing for it ... to bake blackberry and apple muffins.

I've made a few muffin recipes with oats recently, this recipe really works and can take quite a bit of fruit and veg.

Give Blackberry and Apple Muffins a go ... they're delicious [I'm typing with black stained fingers after eaten a warm muffin fresh from the oven].

Preheat the oven to 180C/Fan 160C. Grease 12 holes of a muffin tin well with a little oil.

Measure out into a mixing bowl 200g oats, 1tsp cinnamon, 1tsp baking soda, 125g sugar and give everything a good stir.

Grate (using a food processor) about 4 apples (to give about 400-450g of grated apple). Add this to the dry mixture along with about 200g blackberries. Stir everything to incorporate the apple and blackberries evenly.

Melt 100g butter in another bowl, then beat in 3 eggs.

Add the wet ingredients to the dry and stir well to combine.

Fill your muffin tin with mixture and then bake for 25 - 30 minutes until golden brown.

Cool on a wire rack then eat!

A perfect late summer early autumn treat!
