Tremendous Tomatoes!

I bought some really ripe red tomatoes from the market today, so I'm roasting them sprinkled with chopped garlic and a drizzle of olive oil and balsamic vinegar in a hot oven (about 180C for 30 mins) and serving with fresh basil and pasta.
Tomatoes are a really fantastic food. They are high in Vitamin C and have great amounts of antioxidants and beta carotene.
They're a versatile food to cook with, great raw in salads, a good base for pasta salads, bakes and stews and are a key component of a healthy Mediterranean diet.
