Salmon with Arabiata Sauce
Oily fish contains omega-3 which is essential in our diet. Omega-3 acts as an anti-inflammatory, so when I'm training I always try to have a few portions in my meals each week.
One of my favourite oily fishes is salmon. In this recipe I've paired it with an arabiata sauce.
Arabiata is a great spicy tomato sauce, usually served with penne, loaded with peppers it's packed full of Vitamin C.
In this recipe I steamed salmon my salmon and served it with arabiata sauce, carbs (new potatoes, rice or couscous) and selection of steamed veg for a perfect supper.
Ingredients: 1 small onion a few cloves of garlic, crushed 1 red chilli, finely chopped ½ large red pepper, diced into 1cm sq dice ½ large yellow pepper, diced into 1cm sq dice 1 tin chopped tomatoes 4 salmon filets
Method: Lightly fry the onion, garlic, peppers and chilli in a few sprays of oil. Once the onion and peppers have started to soften empty in a tin of chopped tomatoes. Season to taste with salt and pepper and leave to simmer for about 10 minutes. Steam the salmon until just cooked through, then serve with carbs of your choice, mixed steamed vegetables and the arabiata sauce.
