Carrot & Courgette Marathoner Muffins
A friend of mine is riding the Tour of Wessex this weekend and asked me for meal plan advice.
He's camping, so everything has to be cooked on a gas burner and needs to fuel and recover from 100 hilly miles for 3 days! Good luck with that in this heat!
I promised some healthy treats to keep him going.
Here are Marathon Muffins Version 2.
Preheat the oven to 180C/Fan 160C. Grease 12 holes of a muffin tin well with a little oil. Measure out into a mixing bowl 300g oats, 2 tsp mixed spice, 1 tsp cinnamon, 1 tsp baking soda, 50g chopped walnuts and 100g currents (or raisins) and give everything a good stir.
Melt 100g butter in another bowl mix in 3 beaten eggs, 1 grated courgette, 2 peeled and grated carrots, 100g light brown sugar and 1 tsp vanilla extract.
Mix the wet ingredients into the dry and mix until just combined.
Spoon the muffin mix into the muffin tin and bake for 25 - 35 minutes until the muffins are golden.
