Delicious Banana and Chocolate Squares


When I made Banana and Blueberry bread a week or so ago I felt there was something missing.

Rich dark chocolate.

Ripe banana goes so well with dark chocolate, i knew this cake, which is really quite moist and dense, would benefit from being speckled with dark chocolate chips. So that's what I've done and it's a step change from the original.

Heat your oven to 180C. Whilst the oven is heating, chop a 100g block of good quality dark chocolate into small pieces and mash up 3 large ripe bananas with a fork or with an electric whisk (much easier!)

Once the bananas are mashed whisk in 3 eggs one at a time, giving everything a good beating. Then add 3 tbs maple syrup, 3 tbs coconut oil (melt for a few mins in the microwave first), 1 tsp vanilla extract, 180g self raising flour and mix thoroughly. Finally add the chocolate chips and fold them in gently so they are well dispersed through the mixture.

Pour the batter into a greased and lined brownie tin and bake in the oven for 50 - 60 minutes.

Cool for a few minutes in the tin then turn out onto a wire rack to cool, before cutting into squares.

It's best eaten whilst slightly warm, when the chocolate is still a bit gooey. I tried an artful sprinkling of icing sugar ... decoration isn't my strong point ... but eating is!
