Something Interesting with Tofu

So todays vegetarian meal challenge was to make something interesting with Tofu.

I'm a tofu virgin I started by reading cookbooks and googling a few favourite websites and decided on a "patty" recipe.

Tofu is pretty bland and picks up flavours well, so I've loaded these patties with great indian spice flavours cumin and coriander and a hit of chilli and served with a tomato and veg sauce I found in the freezer and a side salad of lettuce and tomato.

Very easy and tasty!

Grate 2 medium sized carrots, then blitz one medium onion and a couple of cloves of garlic in a food processor. Heat 1 tbs olive oil in a frying pan and lightly fry the carrot, onions and garlic with 1 heaped tsp cumin, 1 heaped tsp coriander and a 1/s tsp dried chilli flakes until the onion is soft.

Whilst the veg is cooking blitz a pack of tofu in the food processor with 3 tbs tahini.

Once the onions are soft cool slightly then add to the food processor with half a bunch of fresh coriander (stalks and leaves), juice from 1/2 lemon, 60g breadcrumbs (I used panko breadcrumbs in a small packet, that about 60g), salt and pepper and pulse until the mixture has combined.

Using your hands form 8 balls with the mixture and flatten slightly into patties.I wanted to add a bit of crisp to the patties as they fried, but had run out of breadcrumbs to coat them in, so I coated in flour instead.

Heat a small glug of olive oil in the frying pan and fry the patties for a few minutes each side until they are crisp and golden.

Serve with a tomato sauce and side salad.
