Bashing Banana and Blueberry Cake
Bananas and Blueberries ... who could resist!
I've eaten a fair few bananas over the past few months marathon training and occasionally peppered my banana habit with banana bread.
Now VLM is over and training paused for a bit and for recovery I've decided to try something different. This recipe is super easy you pretty much beat up the bananas (sorry bananas), mix everything else together and bake!
I used the 'lean and lovely ladies' favourite coconut oil in this recipe, as I have a pot in my cupboard that's collecting dust and maple syrup to add a richness to the mix. I'm just not that 'instagram lovely' to bother with the latest celeb foodie trend.
This is dead easy so enjoy!
Heat your oven to 180C.
Whilst the oven is heating mash up 3 large ripe bananas with a fork or with an electric whisk (much easier!)
Once the bananas are mashed whisk in 3 eggs one at a time, giving everything a good beating.
Then add 3 tbs maple syrup, 3 tbs coconut oil (melt for a few mins in the microwave first), 1 tsp vanilla extract, 180g self raising flour and mix thoroughly. Finally add the blueberries and fold them in gently so they're well dispersed through the mix.
Pour the batter into a greased and lined loaf tin and bake for 60 minutes.
Cool for a few minutes in the tin then turn out onto a wire rack to cool before tucking in.
With bananas and blueberries, this is the perfect post run pick me up!
