sCrumby Carrot Cake!


"Helen, Helen! Please come and run MK Half with us! And bring cake!".

The bling looked great, so I said yes ... story of my life!

I have a large bag of carrots in the fridge, so it was either going to be soup or cake. And cake won! I seem to have got a reputation for baking cake, but alongside baking this weekend I'm also researching veggie meals to try out over the next few weeks. Soon there will be no cake posts, just lovely healthy meals to try!

Carrot cake is a real crowd pleaser. Seeing as I'm having to transport this and leave it with Sharon whilst I trundle along 13.1 miles of roundabout and road around Milton Keynes, and I'm always trying to post reasonably healthy recipes on here, I've omitted cream cheese frosting. This cuts down the fat and calorie load. Result!

Start off by peeling and grating (use a food processor) about 250g carrots.

In a large mixing bowl beat 3 eggs until they're light and fluffy. Add in 100ml oil (rapeseed oil, sunflower oil or light olive oil works well) and 100g soft brown sugar and whisk until combined. Then add in the carrot, 200g wholemeal self raising flour, 100g currents, zest and juice of one juicy orange, 1 tsp ground cinnamon and 1 tsp baking powder and mix to combine.

Pour the batter into a greased and lined loaf tin and bake in a pre heated oven at 170C for 60 minutes.

Leave to cool for a few minutes in the tin then turn out onto a wire rack to cool.

The cake is sticky and moist and the perfect pick me up after a hard run.
