Banana Cheesecake Pots
I'm in the final days of tapering before Virgin London Marathon and need to rest not run. So, CheesecakeRunner, decided needed to make special cheesecake.
Yesterday I collected my number at the marathon Expo. I'd taken a sandwich and a few bananas with me. Two, non eaten bananas were looking a bit worse for wear after their trip into town. So I mashed them up and added to the cheesecake mixture to make Banana Cheesecake Pots.
A delicious high carb treat for carb loading day!
Ingredients: 3 bananas (very ripe) 500g quark 225g sugar 30g plain flour 4 large eggs 400g zero fat crème frache 1 tsp vanilla extract
Method: Heat your oven to 150 C and boil a kettle. Find 12 ramekin dishes and lay out in a roasting tin.
Mash up the bananas. I find it easiest to do this with an electric hand mixer. Then blend the quark, sugar and flour. Add the eggs one at a time and once the quark mix is smooth add crème frache and vanilla extract. Mix everything until smooth, then ladle into your dishes (in the roasting tin).
Put the tin in the oven and pour the hot water around the pots. This creates a baine marie which will help the cheesecakes to gently cook.
The pots will only need 30 mins to cook. After 30 mins they will be firm, but with a slight wobble. Take out the oven and leave to cool, then chill for as long as you can wait, before diving in!
