I'm a massive fan of beetroot. I love it! And always up for trying out a new recipe or adding to stews and salads.
Today I made beetroot crisps. I can't believe I've not tried these before!
First slice the peeled beetroot in my food processor (you can use a thin setting on a mandolin).
Toss the thin slices in 1 tbs olive oil (I sliced 2 beetroot for 1 tbs of oil), then spread out onto lined baking sheets (don't overlap, or they won't crisp) and bake for 10 mins on one side, turn over and bake for another 5 mins.
Remove from the oven sprinkle with salt, cool and scoff!
