Flapjacks with Nuts & Seeds
Yesterday I did my first long run in a few months, so feeling a little jaded this morning. I needed an energy boost pick me up so I've just made a batch of flapjacks packed with fruits and seeds.
I followed a basic flapjack recipe and added in handfuls of raisins and good slug of seeds.
Melt 125g butter with 125g sugar and 75g golden syrup over a low heat. When the butter has melted and everything combined add in 250g oats, a few handfuls of raisins (or dried fruit of your choice) and a good slug of seeds (pumpkin, sunflower, chia are good).
Line a tin with baking parchment and tip the flapjack mix in and smooth down the top. Bake at 180C for 25 to 30 mins until the flapjack is golden. Leave to cool in the tin for a few minutes before cutting into squares. Cool in the tin so the flapjack has opportunity to harden.
